What to eat Wednesday- Waffles


I think that I will share just a few more breakfast/brunchish ideas over the next 2 weeks-

I first fell in love with waffles when I moved to Colorado- The family that I was living with and helping with their kids, (kind of like a nanny) would put peanut butter on their waffles. The combination of the peanut butter and syrup was surprising to me but oh-so-good.

Move forward about 6 years and I am traveling with Jay and our first 2 to Oregon. We stayed in a Marriott that had one of those neat twisty turny waffle makers, and the BEST waffle batter I had ever tasted!
We got to stay in this same hotel several times- and every time I hoped that they would still have the waffles- and they did!

I have not found the exact recipe for the waffles I had there, but this one is really close.
I love to make homemade waffles from scratch- it really does not take that much longer.

1 1/2 cups all-purpose flour
1 teaspoon salt
1/2 teaspoon baking soda
1 egg
1/2 cup granulated sugar
1 tablespoon granulated sugar
2 tablespoons butter, softened
2 tablespoons shortening (I never have this, so I just use 2 more TB of butter)
1/2 cup half-and-half
1/2 cup milk
1/4 cup buttermilk
1/4 teaspoon vanilla

1. Combine flour, salt and baking soda in a medium bowl and stir to combine.
2. Lightly beat the egg in another medium bowl and cmbine with sugar, butter, and shortening, mixing well until smooth.
3. Add the half& half, milk, buttermilk and vanilla and mix well.
4. Add the dry flour mixture to the wet mixture while beating and mix until smooth.
5. If you can, cover and chill overnight, though the batter can be used right away.
6. Rub a light coating of vegetable oil on a waffle iron, and preheat it.
7. Leave the batter out of the refrigerator to warm up a bit as your waffle iron is preheating.
8. Spoon 1/3 to 1/2 cup of batter into the waffle iron and cook for 3 to 4 minutes or until the waffles are light brown.

That looks heavenly! Ok, now you need to tell me who makes a good waffle iron. I've stayed in a couple of hotels that had those special rotating waffle irons...they were so much fun! I could have made waffles all morning!! Ya know, I even prefer waffles to pancakes, so I think this one is going in my recipe book for sure. Thanks!!

I have needed a good waffle recipe. I am going to make them for dinner tonight. Crazy enough, I actually have buttermilk and cream in my fridge. (do you think I can use cream instead of half and half?)

I found my waffle iron at a garage sale in Oregon. It is a deep one-
by Krups.
Yes I think that you can use cream- Its worth a try anyway.

They turned out great!! They were so yummy. I think that next time I make them, I am going to add a little more vanilla. Also, when I pulled them out of the waffle maker, they were soft not crisp on the outside. I was a little disappointed, but when they sat on the plate for a few seconds, they crisped up and were perfect. It was the wierdest thing. Is that how yours are? One more thing I learned from Alton Brown on the food network. The waffle has more surface area the internal volume. Interesting huh? Keep the great recipes coming.

Ooh, I love waffles and I will definitely try your recipe. We like them with peanut butter and syrup too!
