This comes from my friend Holly. She made me a wonderful little cookbook of her favorite recipes when she was moving from Oregon and I had moved to OK. Anything that Holly has is good. And it probably has cream or butter in it!

Love this soup- and so does the whole family. No tears with this meal- well actually there were. But it was before Luke tried it. He was just sure he would not like it. It was green after all. But once he tried it -a big smile came across his face and he said "you are right, I love it!" Savanna even took it for lunch the next day. You know its good if its eaten the next day as a leftover!
What I really love about this soup is that its not filled with cheese. Usually I like cheese on top of my soup, but this is so different. It does not need it. It stands on its own.

1 1/2 pounds broccoli
2 cups water
1 large stalk celery, chopped (about 1 cup)
1 medium onion chopped (about 1/2 cup)
2 T butter
2 T flour
2 1/2 cups water
1 T instant bouillon
3/4 tsp salt
1/8 tsp pepper
dash of ground nutmeg
1/2 cup whipping cream
Cut broccoli into bite-sized pieces. Add broccoli, celery and onion to 2 C boiling water. Cover and boil until just tender-about 10 minutes. Don't drain. Place in blender and blend until uniform consistency. Leave some of the broccoli out if you want a more "chunky" consistency, blend the rest then add the pieces back into the soup.
Heat butter until melted, stir in flour and cook until mixture is smooth and bubbly. Remove from heat.
Stir in 2 1/2 C water. Heat to boiling, stirring constantly. Boil and stir one minute. Stir in broccoli mixture, bouillon (dry), salt, pepper and nutmeg. *Add 1/2 cup whipping cream. Heat just until hot-do not boil.

I made the other two versions of this soup today. I will post again tonight and let everyone know what the family thinks of them. I love them. Just adjust the consistency of the soup with your blender. If you want it more chunky then leave more out before you blend it.
For the Cabbage soup I think I will blend it a little more next time.
*For the record-if it was a choice between the Broccoli and Cauliflower the Broccoli wins. If its a choice between Cauliflower and Cabbage the Cauliflower wins. And Savanna even took it for leftovers! The family would eat the Cabbage soup if there was not another choice in front of them. I don't think I would go out and buy Cabbage to make this, but if I had a lot on hand this would be a good way to use it.

Use the same ingredients as the broccoli soup- just substitute 1 head of cauliflower separated into florets for the broccoli and add 1 T lemon juice with the onion.

Use the same ingredients as the broccoli soup- just substitute 1 medium head green cabbage shredded for the broccoli, and decrease boiling time to 5 minutes.

Yum. I have been ill for the last couple of days. I feel cold and that soup looks like it would warm me up. I think I will clean the kitchen and see what soup-like ingredients we have.

Those all look delicious. Do you think I can get Jenna to eat them just because Savanna will?
