what to eat wednesday -oatmeal pancakes


I have no idea where I got this recipe, or when I first devoured these hearty cakes. But it is typed into my recipe book and we love 'em. They are so filling that one is really enough. I love the nuts and the sweetness of the orange juice. I can't taste the oatmeal but it sure gives these pancakes some density. These are not light and fluffy- but heavy and thick and a full meal!

 
2 eggs 
2 Tablespoons vegetable oil
1 cup flour (or 1/2 cup flour 1/2 cup whole wheat flour)
1 cup rolled  oats
1 1/2 tsp baking powder
1/2 tsp salt
3/4 or so orange juice
1/2 cup chopped nuts or fruit  
In a small bowl, mix the eggs with oil.  In a medium bowl combine dry ingredients. Stir the egg mixture into the dry ingredients then stir in enough orange juice to create a thick batter. Add chopped nuts or dried fruit if desired. Heat butter (or spray pan) then pour batter by quarter cupfuls. Cook until done turning once. Makes about 9 medium sized pancakes.
