What to Eat Wednesday


I have a dear friend who is moving away at the end of the month. It pains me. Many tears have been shed, and many more will come I am certain. I can't even talk about it without my nose stinging, my sinuses getting stuffy and my eyes watering. I am sure I am not the only one that feels this way. Anyone who knows her can call her friend.
So I dedicate this 600th post and what to eat wednesday in her honor. It is so simple and sweet.
And that is something to be grateful for. Simplicity and sweetness and friendship.


Allyson made this shortly for us after she moved here to Oklahoma. I was watching her girls and she brought over popcorn for the kids to eat. Savanna had some and thought it was the best popcorn she had ever tasted. I looked at it, and it looked like normal popcorn with sprinkles on it. So I kind of passed on it. Savanna kept talking about it as she and the boys ate handful after handful. I finally grabbed two kernels before it was gone. This was not popcorn with sprinkles. It was delicious, melt in your mouth goodness. I was sure Allyson had made some kind of yummy topping to drizzle all over the top.
When I asked her she slyly smiled and said you won't believe how simple it is. Just melt 2 pieces of almond bark then poor it over popped microwave popcorn.
Couldn't get any easier than that!

Candy Popcorn (also called Gourmet Popcorn)
Bag of microwave popcorn
2 squares almond bark
sprinkles in any shape or color

Pop popcorn in the microwave. Melt 2 squares of almond bark and pour inside bag of popped corn. Add sprinkles. Pour into bowl and let set. Toss a little before serving. Yum.

I had no idea that it was so easy! And Allyson is moving?! What a loss for OKC and a blessing to their new home.

Now you are making me cry. And you have taught me something with this post.....I've never poured the almond bark into the bag, I've always done it in a bowl. Genius! Now it will be even faster to make!

I know what you mean... I've been feeling like crying about it too. They will be missed! Glad you posted her popcorn recipe... it's so yummy!

I have always made this around Christmas time. I make peppermint popcorn. I do the same thing you do, but I add some crushed candy cane to the almond bark. Yummy!

That sounds terrible. So terrible that I will make it this weekend and not share with anyone.

There is a "gourmet" popcorn store in the mall and I bet this is how they do it.

PS I know EXECTLY how you feel, you moved away from me and I still get a bit weepy. You do that to people. miss you still.
