What to eat-Imitation Cafe Rio Grilled Chicken Salad

It has been 5 years since we lived in Utah.
It has been 5 years since I have eaten at Cafe Rio.
We had a missionary eating at our house a few months ago, and I was telling him how much I loved Cafe Rio. He tried to tell me that it was not very good. He did not come back to eat at our home again.
This is our version of their salad. MMMMMMMMMMM-
We have a few in our family that request this for their birthday meal, and want to take it to school for lunch!

Tortilla heated with cheese
cooked rice
cooked black beans
shredded lettuce
grilled chicken
little bit of cheese on top
crushed tortilla chips
scoop of quacamole
cut lime
dressing



The dressing:

Cafe Rio Creamy Cilantro Ranch
3 fresh tomatillos, cut into quarters
1 package buttermilk ranch dressing mix
1 cup mayo
1/3 to 1/2 cup buttermilk
1 cup fresh cilantro
2 cloves crushed garlic
1/4 teaspoon crushed/ground red cayene pepper(I omit this)

Combine all ingredients in blender. Let chill in fridge for at least 1 hour before serving.
*for thicker dressing reduce mayo to 1/2 cup & sour cream to 1/2 cup

I don't think I would have that missionary come back either. I am realy going to try this soon. What, a whole month in ut and I can't even get to Cafe Rio. I am sick in the head!
