what to eat-Veggie-Filled Quesadillas

Found this through Better Homes and Gardens-
This is another one that the whole family will eat..and will ask each other "hey, are you going to finish that?"

Veggie- Filled- Quesadillas
2 small green or red peppers, cut into thin strips
1 small red onion
2 tsp cooking oil
1/2 tsp ground cumin
1/2 tsp chili powder
2 TB fresh parsley or cilantro
1/3 cup cream cheese
tortillas
salsa

In a large pan cook peppers and onion in 1 teaspoon of the oil for 3-5 minutes or until crisp tender. Stir in cumin and chili powder. Cook and stir for 1 minute more. Stir in parsley. Set aside.
Spread cream cheese over half of 1 side of each tortilla. Top with pepper mixture. Fold tortilla in half over peppers, pressing gently.
Place tortillas on an ungreased large baking sheet. Brush with the remaining 1 tsp oil. Bake in 425- degree oven for 5 minutes. Cut Quesadilla into wedges. Serve with salsa.

I made these for dinner last night. They were a screaming hit. Fuller ate a ton and Jon really liked them too. We also had beans and mexican rice, and it was a great vegetarian meal. I don't get away with that much at my house, but it was so refreshing. Thank you keep the great recipes coming. ps We are going to have caramel apples next week for FHE
