what to eat wednesday- Chicken Soup with Rice




Chicken soup with Rice

2 quarts chicken broth
1 box original-Uncle Ben's long grain and wild rice (or 2/3 cup wild rice)
1/4 stick plus a little butter
1/2 cup finely diced onion
1/2 cup celery
1/2 cup carrots
1/4 cup green pepper
2 Tablespoons diced pimento
1 Quart white sauce-
1/2 cup butter
1/2 cup flour
1 quart milk
Chicken-cooked and chopped- optional
Saute vegetables in butter. Wash rice if it is not Uncle Bens, and add to vegetables as they are sauteing. If it is Uncle Ben's add rice and seasoning packet to vegetables as they are sauteing. Add chicken broth and simmer 1/2 hour or until rice is done. Make white sauce by melting butter then add the flour and stir well. Add milk stirring constantly until thick and boiling. Add the white sauce to soup.
Add chicken for a complete meal.
Makes about 12 servings.

Now don't think this soup is only for November!
(I think that based on the poem, May is my fav-mix it once mix it twice ...)

And thanks to my handy MS clip art measurement chart from Miss Alisa, I know how many cups are in a quart of milk. (That and many many 3rd grade drills.)

oh oh oh and I bet you could use leftover turkey in this too!!!!
