What to eat Wednesday-Hoisin Chicken with Cashews

Today is kind of a 2 for 1-
Most of my favorite recipes have come from others. This one is no exception.
I think I really started to learn to cook when we had our first child. Up to that point we had spent 2 years of eating Olive Garden leftovers, and anything quick that was in a package. I do not remember but a few times that we actually "made" food. After our first baby came, I was home, and, I had time to "learn"- Our friends the Ryans would have us over, and I would go home and make again, whatever we had eaten at their home. We soon started sharing recipes, and she gave me a few cookbooks. This is one of the first meals that I remember eating at her house. I can't eat this, without having the salad, and this dressing. Normally I love ranch, but not with this meal. You can find the Hoisin sauce with the asian foods.

Hoisin Broiled Chicken with Cashews
1 cup rice
1/2 cup frozen peas
4 medium skinless boneless chicken breasts
2 Tablespoons Hoisin Sauce
2 Tablespoons cashews
2 green onions sliced

*Set oven to broil. Prepare rice according to package directions except omit salt and margarine. Stir peas in with rice
*Meanwhile rinse chicken pat dry. Place chicken up on the unheated rack of a broiler pan. Stir together hoisin sauce and 2 Tablespoons water in a small bowl. Brush chicken with mixture and broil 4-5 inches from heat for 7 minutes. Turn and brush with more sauce. Broil 5-8 minutes more or until chicken is tender and no longer pink. Serve over rice mixture. Top with nuts and onions.
Lately I have not broiled this, I just grill it with the Hoisin sauce

Salad & dressing
I love good salads- and I love it more when they are made by someone else.
My favorite things for this salad with this dinner are
Lettuce-(of course)
fetta
red onion
mushrooms
bacon
craisins
normally I add nuts of some kind-like pecans, walnuts, or soy nuts, but since this dinner already has cashews, I skip those.
I have to eat this salad with this meal with this dressing....I just love it.




The best part of this meal to me, is after its all on your plate, and you have had a few bites, and everything just starts to blend together. The cashews, with the green onions, with a little bit of rice and peas, and maybe a mushroom bite. Or a piece of chicken with red onion and a cashew bite. Or maybe a little rice with both onions, and a craisin and a pea or two bite.

Yum! That sounds right up my alley. Will have to give it a try. I'm going to post my first recipes on Friday with "I Like to Cook"! But I think my favorite part of your post here is the dinosaur! Ha!

I am with ya on the salads...way better when I'm not the one making it! Do you post a new recipe every Wednesday? This looks super scrumptious and now I'm rethinking what I had planned for this week!
