What to Eat Wednesday


This is another yummy from my neighbor Lisa. She was telling me about it over the phone and right then and there I wanted to make it.
It seems like just another normal bundt type cake.

Until you slice into it and its layered sweet cinnamon sugar in between moist cake.


Sour Cream Coffee Cake



2 sticks butter, softened
1 cup sugar
3 eggs
1 tsp vanilla
1/2 tsp lemon juice
2 1/2 cups flour
1 tsp baking powder
1 tsp soda
1/4 tsp salt
1 cup sour cream
1/4-1/2 cup chopped nuts
1 tsp cinnamon
1/2 cup sugar

In a large bowl combine butter and sugar. Cream together then add eggs, vanilla and lemon juice.
In a small bowl mix flour, baking powder, soda, and salt.
Add sifted dry ingredients in thirds to creamed mixture and alternately with sour cream. Beat until smooth. Set aside.
Mix topping of chopped nuts, cinnamon and sugar.

In a bundt pan layer:
spray with cooking spray
sprinkle with 1/3 cinnamon topping
spread 1/2 cake batter
sprinkle with 1/3 cinnamon topping
rest of cake batter
remaining cinnamon topping

Bake 350 for 40 minutes until finished then remove. Let set 10 minutes and turn out onto cake plate.
Delicious with fresh strawberries.

We have this Coffee Cake (we call it Jewish Coffee Cake, I don't know why)as a tradition on Christmas morning. My mom makes it. We love it.
