What to eat Wenesday- Chili Salsa Beef

You know the saying... never trust a skinny cook?
Well throw that phrase out the window. My super talented, and super skinny sister-in-law Denise, shared this with me a few years ago.
This makes a lot.. Easy easy, and can also be made with shredded chicken.

Chili Salsa Beef

Cook a roast in crock pot until it shreds easily. About10-12 hours
Saute
1 Tablespoon olive oil in pan with 2-3 garlic cloves
Then add
4 Tablespoons brown sugar
2 Tablespoons soy sauce
1 ½ cups salsa
2 cans black beans
Add roast, and simmer for 1 hour.
Serve over rice with lime and cilantro as a garnish and chips.
